Melt butter or margarine uncovered at 300 degrees F. in an electric skillet
or about medium high
heat in a large frying pan. Add shredded carrots and sauté
until tender. Add 1/2 cup water to the
carrots - if needed. (If you would like, you can cook the carrots ahead
of time with and add some
butter or margarine and shred them after they are cooled.) Reduce heat
to 225 degree F. in a skillet
or about medium heat in a frying pan. Stir in stuffing mix and turkey
or chicken. In a bowl,
combine soup, sour cream and water. Stir in stuffing mix. Cook
for about 10 minutes or until
heated. Reduce to warm or low and add cheese if you would like.
Let cheese melt. Serve.
