Gluten-Free
Recipes
On May 7, 2002, I started to make dinners that are gluten-free.
I
called and a representative said that the "distilled vinegar" in the
"Van Camp's Pork and
Beans"
could be derived from wheat. (You will need to contact Van Camp's
to if this is still a fact.)
My husband tried a gluten-free diet for a month and it didn't not seem
to
help him so he stopped the gluten-free diet. It seems like it
wasn't long enough to heal his small intestines and he did get traces
of gluten in his diet with the sacrament bread. (Now that is no
problem since we take our own bread.)
On December 20, 2003 (lunchtime): I went gluten-free. The
rest of our family went gluten-free on December 23, 2003.
Go to Dairy-free
Main Dishes to find other recipes (just substitute the flour with
acceptable gluten-free flours or starches).
To find other seasoning mixes, go to Convenience
Foods Recipes for other seasoning mixes and more.
NOTES:
- Make sure you use gluten-free rice or soy milk in your recipes.
- Use gluten-free breads, buns, corn tortillas, etc. for sandwiches.
- For one stick (1/2 cup) of unsalted margarine, add 3/8 of a teaspoon
of salt (a heaping 1/4 teaspoon) to the recipe. (I always use 1/4
teaspoon on salt for recipes that call for 1 3/4 to 2 cups of flour.)

Autism Links
Our family has lots of the symptoms for Asperger's Syndrome (or even
High Functioning Autism). Our
youngest doesn't have these symptoms. She is just kind of shy but
is
totally different than our two oldest children (and her parents).
If you need
information and ideas, etc., here are some links that will help
you. They also say you need to rotate your grains and other foods.
