Gravy with Noodles or Rice
This is the same recipe as my Stroganoff recipe except I placed options
for noodles or rice.
This is a dairy-free recipe but you can use cow's milk instead and any
type of margarine if your diet is not dairy-free.
1 to 1 1/2 cups cooked & diced beef, chicken (or
other meats), or 1/2 pound ground beef
12 ounces pasta or 1 1/2 to 2 cups uncooked rice
1 1/8 teaspoons salt (Use about 3/4 teaspoon salt if using salted
margarine or if the broth or meat that has salt in it.)
1/4 cup unsalted acceptable margarine (Reduce the amount and add the
equal amount of liquid if you don't want as much fat.)
1/4 cup all-purpose flour
1 cup rice/soy milk
1 cup beef, chicken, pork or other meat broth
1-14 to 15 ounce drained canned vegetables (French style green beans,
corn, etc.) or 2 cups vegetables
Note: If this is for young children, you can eat the meat on the side.
Cook pasta or rice according to the directions on
the package.
Drain the noodles.
If using ground beef, brown meat. If needed,
remove excess fat.
Gravy/Sauce: Add margarine, salt, and 1
cup
milk to rounded large saucepan. Melt margarine over a little
under
high burner. Add flour. Mix with a slotted spoon. Add
broth slowly to saucepan. Stir as you add it. Let thicken.
Makes a little under 2 cups.
For Noodles: Add meat
(can be omitted), vegetables, and noodles. Stir. Let
vegetables warm. Serve.
For Rice: Serve as a gravy mixture (on individual plates).
(About 1 1/2 to 2 cups uncooked rice.) Serve with
vegetables
and meat.
