Spice Cake

Spice Cake
3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 cup granulated sugar
1 cup brown sugar
 or 1 cup more of white sugar and 2 tablespoons light molasses
1/2 cup vegetable oil
1 1/4 cups water (or rice/soy milk)
3 eggs
1 tablespoon vanilla
Penuche Frosting or Creamy Frosting or powdered sugar (if desired)

Grease and lightly flour a 9x13 inch baking pan.  In a mixing bowl combine granulated
sugar, brown sugar (or 1 cup more white sugar and molasses), oil, milk and/or water, eggs,
and vanilla.  Beat until combined.  Add the flour, then the salt, baking soda, cinnamon,
allspice and mix slowly on low speed until combined.  Beat on medium speed for about 1
minute.  Pour in the prepared pan.  Bake at 350 degree F. oven for 40-50 minutes or until
toothpick comes out clean.  Cool cake.  Frost cake or sprinkle with powdered sugar.  (You
can eat this cake plain if you desire.)

Apple Spice Cake
Peel and grate 3 medium sized apples.  Add to liquid ingredients.

Applesauce Spice Cake
Follow the above recipe except use 1/2 cup water (or milk) and 3/4 cup applesauce.

Pineapple Spice Cake
Follow the above recipe except use a 20 ounce can of crushed pineapple and only 1 cup
water (or milk).
