Soft Drop Cookies

Soft Drop Cookies
1 cup sugar
1/2 cup shortening (or softened margarine)
2 eggs
1/4 cup rice/soy milk (or water)
2 tablespoons + 1/2 teaspoon rice/soy milk (or water)
1 teaspoon vanilla
2 cups all-purpose flour (shake and level off)
1 3/4 teaspoons baking powder
1/4 teaspoon salt

Note: You can use other types of milk if your diet is not dairy-free.

Cream shortening and sugar. Add eggs.  Mix on low speed. Add liquid.  Mix on low speed.
Add to creamed mixture and mix on low speed and then medium speed.  Add flour, baking
powder, and salt.  Mix.  On a slightly greased cookie sheet, drop a tablespoon of dough (or
use a cookie dough scoop).  In a 375 degree F. oven, bake 12 to 15 minutes or until the edges
and bottoms are slightly golden brown.  Makes about 25 to 30 cookies.

Soft Vanilla Drop Cookies
Use 1 tablespoon vanilla and only 1 1/2 tablespoons milk (or water).

Soft Cinnamon Drop Cookies
Add 1/2 teaspoon ground cinnamon to the recipe.

Soft Lemon Drop Cookies
Omit the 2 tablespoons + 1/2 teaspoon milk (or water) and the vanilla and add 2 1/2 tablespoons
lemon juice instead.

Soft Orange Drop Cookies
Omit the 2 tablespoons + 1/2 teaspoon milk (or water) and vanilla and add 2 1/2 tablespoons
orange juice instead.

Soft Pineapple Drop Cookies
Omit the 2 tablespoons + 1/2 teaspoon milk (or water) and vanilla and add 2 1/2 tablespoons
pineapple juice instead.

Soft Raisin or Chocolate Chip Drop Cookies
After the cookies are placed on the cookie sheets, add 4 raisins or chocolate chips or
acceptable chocolate chips per cookie to any of the above variations.  Place 3-4 raisins or
chocolate chips on each cookie (if desired).

Soft Happy Face Drop Cookies
After the cookies are placed on the cookie sheets, add 4 raisins or chocolate chips or
acceptable chocolate chips  per cookie to any of the above variations.  Place 7 raisins or
chocolate chips to make a happy face.  (Use 2 for the eyes, 1 for the nose, and 4 for the
mouth.)
